Keralan chicken Ishtu Curry

Ingredients


• 4 tbsp vegetable oil

• 2inch cinnamon stick

• 6 green cardamom pods

• 4 cloves 

• 5 or 6 grinds of black pepper

• 1 Star Anise 

• 15 curry leaves

• 1 red onion, finely sliced

• thumb-sized piece of ginger, peeled and finely chopped

• 4 large garlic cloves, finely chopped

• 1 red chili, deseeded and finely choppped

• 2 tsp fennel seeds 

• 1 tsp ground turmeric

• 1 tbsp ground coriander leaf

• 600g chicken thigh fillets

• handful green trimmed and halved green beans

• 400ml can of coconut milk 

• 2 tbsp coconut cream shaved off a block (available in most supermarkets) 

• 1 tsp vinegar 

• 200g washed spinach

• small handful fresh coriander, to garnish
