Red Cabbage with apples and onions
Ingredients
1 x red cabbage shredded
1 onion finely sliced
2 apples cored and chopped fine
1 small pear chopped fine
2 x star anise
1 tsp cinnamon
250 ml vegetable stock
75 ml cider vinegar
Method
Place all the ingredients in a saucepan and season. Place uncovered over a medium heat, bring to the boil, then turn down the heat and simmer for at least 45 mins. Very simple!
